Offline Bitcoin wallet

I would like to have bitcoin and store them as safely as possible. I want bitcoin data to be stored on my disk -- I don't want to some online service to manage my wallet. I also would like to have ability to easily backup wallet data so if my disk fails I can then recreate my wallet from backup.
Nice thing is to have ability to transfer wallet from one program to another so if some program ceased to be developed I can import my private/public keys to another program.
Can you recommend any application like that?

Electrum on Puppy Linux - Bootable USB with Offline Bitcoin Wallet

It took me 3 days to find solution that works. If you like it, send any amount of bitcoin to:

Steps:
  1. Puppy Linux ISO has only 220 MB. Download ubuntu-compatible ISO from http://puppylinux.com
  2. Rufus - download portable version from https://rufus.akeo.ie
  3. Create bootable USB using Rufus, selecting ISO of Puppy Linux
  4. Boot from USB to Puppy Linux
  5. Create Save File - if not, all system changes and user file changes will be forgotten on reboot
  6. Puppy Package Manager - Update database
  7. Install packages:
    python-qt4
    python-pip
    python-sip
  8. Install electrum using pip2 command
  9. Protect yourself: turn on firewall
  10. Make USB offline: disable all network adapters
  11. Start Electrum and create your first offline wallet

Lets Get TREZOR the offline Bitcoin Wallet to work with DOGE

Hey guys, I am not sure if anyone else is getting a TREZOR (whenever they ship), but I emailed them the other day wondering if TREZOR will work with dogecoin. They replied that they will see if there is interest from others.
I converted all my bitcoins to dogecoins so I no longer have any use for it. However, I think compatibility TREZOR will do wonders for the safety of those with a lot of dogecoins.

newb questions - spending offline bitcoin wallets. storing public and private keys.

hi... some newb questions please.
  1. If I have an offline wallet with 2 BTC and want to buy something for 1 BTC - can i spend 1 BTC out of the offline wallet (and have 1 remaining in the offline wallet) or do I have to import 2 BTC into an online wallet and spend 1 from there. I read something saying you have to import the whole amount to an online wallet or else you lose watever is left.
  2. could i just write down the private and public keys on a piece of paper for offline storage - i mean, there is no need for the QR codes i assume/.

Started investing in bitcoin using coin base pro. But as I look more into it most guides recommend storing your currency on an offline ledger or wallet. How do you protect yourself from a flash crash or 20% drop in value if its in a wallet?

Everywhere I see points to not leaving your crypto or cash on an exchange as they can get hacked, or your account can get hacked and your money taken. They recommend you use an offline ledger like the Ledger Nano X as an example, or a digital wallet. This is all fine but how do you protect your bit coin value in the case of a flash crash? Or do you need to choose?

Anonymity

Hi,
I am interested in bitcoin and about taxes and stuff. So I know that in my country you must also pay tax over bitcoin, but how can the government know that I say the correct amount of bitcoin I own? I thought it was anonymous. Also, is there a difference in anonymity between offline bitcoin wallets and online like coinbase? How can they track the bitcoin?
